In today’s economy, money is tight for most. People are not spending as frivolously. Tension is tight. The working bunch are consumed in their jobs in hopes of avoiding dismissal while the studious group are working hard to finish the term. Packing lunches have become the norm for many as eating out also means eating into wallets. Sounds depressing eh?

It should be noted that reusing lunch bags are also environmentally friendly… so why not? : ) To get you started allow me to introduce a quick and yummy recipe i whipped up:
The Chicken Avocado Baguette:
1 fresh baguette
1/2 of a ripe avocado
1 block of parmigiano-reggiano
1 romaine lettuce washed (you’ll only need a few leaves)
1-2 pieces of chicken breast (depending on your appetite)
1 1/2 table spoon of mayo
*pinch of salt & pepper to taste
*a sprinkle of lemon juice
step 1: cook chicken breast in a medium sized saucepan, seasoning with salt & pepper
step 2: grate 2 tablespoons of parmigiano-reggiano and mix with mayo– add salt & pepper to taste
step 3: peel and slice avocado and squeeze 1 tablespoon of lemon juice over top
step 4: cut baguette length wise and toast if desired. you are ready to begin assembling
step 5: spread mayo mixture on both slices of bread, layer on romaine lettuce, avocado slices and chicken breast– ready to serve!
